Quick Mix Apple Spice Cake

Another recipe from the folder, scribbled onto a scrap of paper with no reference to the source.  Versatile and easy to make. The mixture makes quite a large cake or make into two smaller cakes or as I often do into a large slab tin and a small cake. Cream cheese frosting makes for a more indulgent cake or use lemon icing and sprinkle with a little cinnamon. 




Apple Spice Cake 
185 g butter, very soft
1 1/2 cups dark brown sugar
5 eggs
1 container sour cream (300 ml)
2 cups SR flour
1 teaspoon nutmeg
2 teaspoons cinnamon
1 teaspoon mixed spice
1/2 teaspoon ground cloves
3 apples, grated

Beat butter and sugar together, add remaining ingredients and mix until just combined. Spoon batter into greased and lined tin. Bake 170 deg C until skewer tests clean.

Lemon Icing
2 cups icing sugar, sifted
1 tablespoon melted butter
1 - 2 tablespoons lemon juice

Combine icing sugar and melted butter, stir and add lemon juice one tablespoon at a time until mixture forms a spreadable icing.
