Lamb Roasted Potato Slices with Anchovy Sauce

So easy, great as a family meal or jazz it up with some anchovy sauce for a casual dinner. Serve with a bowl of steamed vegetables or a salad.


You will need
1 leg of lamb, flat boned
6 -8 potatoes, 
2 onions
A little oil
2 cloves of garlic, thinly sliced or crushed
optional
sprigs of thyme, rosemary 

This is how
Thinly slice potatoes and onion, place in a shallow baking tray or lasagne dish, add garlic and herbs. Pour over a little oil and mix through the potatoes and onions.


Place lamb on top of the potatoes and bake at 180 deg C for about an hour and a half or a lower temperature for longer.

When lamb is cooked remove from the oven, place lamb on a plate, allow to rest for approximately ten minutes, keep warm.









Increase oven temperature to 200 deg C, Return potatoes to oven and allow to become really crispy and brown.


Carve lamb into slices and place over potatoes.








Pour some anchovy sauce over the lamb and garnish with chopped parsley.

Anchovy Sauce
1 cup cream
6 anchovy fillets, mashed
2 cloves garlic, crushed
generous pinch of chilli flakes
chopped parsley, 1/4 cup approximately

Combine cream, garlic and anchovies in a pan and simmer for a few minutes. Add parsley
