Winter Lunch - Soup & Toasted Sandwich

On a cold day there is nothing as warming as a cup of hot soup for lunch. This soup was made with leftover cauliflower and cheese sauce. This technique works well for a variety of leftover vegetables and can turn a cup of vegetables into a delicious cup of soup.

Put the leftover vegetables in a saucepan, add a little stock or water, purée with a stick blender and simmer until hot. Alternatively purée the vegetables with a little water in a food processor and reheat, adding more water or stock as needed. Add a splash of cream, some chopped parsley and serve with some crusty bread, toast or as I did, with a pan fried ham and cheese sandwich.


The best toasted sandwich has a warm filling and melty cheese. I do not have a sandwich maker so I use my electric frypan or a pan on the stove top. The secret is to use a very low heat so that bread doesn't burn and the filling warms up.
