What to do with Condensed Milk

I always have a can or two of condensed milk in the pantry and a packet of Marie biscuits, With these two ingredients you can quickly and easily make a variety of  unbaked slices. I have been makingCaramel Hedgehog for as long as I remember and  makes a great change from the more popularly made and served lemon slice. It slices easily and keeps well if refrigerated.  The original recipe, given to me by a parent early in my teaching career, was in imperial measurements, I have adapted it to suit metric measurements. Unless you make another slice  you have the problem of what to do with the leftover condensed milk. It can be solved by making some ice cream. The recipe that I have given is very simple and requires no churning.



Caramel Hedgehog
Ingredients
125 grams butter
3 tablespoons brown sugar
1 tablespoon golden syrup
3 tablespoons condensed milk
2 teaspoons vanilla essence
1 pkt Marie biscuits

Method
Put butter, sugar, golden syrup and condensed milk in a saucepan. Slowly bring to boil, stirring to make sure it doesn't stick or burn. Simmer for 1 minute, stirring.



Remove from heat. Add vanilla and broken biscuits.


Mix caramel and biscuits


Grease and line a slice tin with cooking parchment. Press slice mixture into the tray. Smooth and refrigerate.
Ice with lemon icing and sprinkle with chopped nuts.


Lemon Icing
Ingredients
1 1/2 cups icing sugar
2 teaspoons melted butter
rind and juice of 1 lemon

1/3 cup chopped walnuts

Method
Combine all ingredients in heat proof bowl.
Mix to a spreading consistency.
Optional - Microwave on high for 30 seconds. Mix again.


Spread over the slice. Sprinkle with chopped walnuts.


Icecream

This ice cream is a good way to use up the remaining condensed milk and needs no churning. It is easily doubled using a full can of condensed milk and 600 ml cream. Caramel condensed milk (Top n Fill) can also be used to make a caramel ice cream. Coffee ice cream, featured in the photographs, is made as for the vanilla with coffee added to the condensed milk.

Vanilla Ice cream
Ingredients
300 ml cream
1/2 can condensed milk, approximately
2 or more teaspoons vanilla concentrate, to taste.

Coffee
1 - 2 tablespoons good quality instant coffee
1 tablespoon boiling water
Dissolve coffee in water, add coffee mixture to condensed milk

Method
Beat/whip cream until thick


Add condensed milk and vanilla, Mix through. If using the electric mixer use the lowest setting and only until mixed through. Do not overbeat.



Spoon into a container and freeze.
