Dinner in a Hurry - Quick and Easy Sticky Chicken

Cooking is my favourite pastime and I get endless pleasure from it, however, sometimes a quick dish that is yummy, very little work and can be ready in twenty minutes is great.

As with any recipe that is quick and easy you need to have already done the shopping and have some basic supplies on hand.

This recipe has ingredients that can be easily stored in the pantry or fridge and reheats well in the microwave. It can also be frozen. I like to use chicken thigh fillets as they have more flavour and are juicier when cooked. If you are not particularly organised I recommend buying the fillets in a sealed container that is a type of longer life product as they usually have a few days fridge life. I usually allow 11/2 thigh fillets per person. I keep small knobs of garlic in the freezer and grate it frozen. I also prefer to use a non stick pan but this is not essential. Whilst I do not buy the ginger and garlic in jars they would be fine to use. This recipe will make enough for 4 generous servings. The meal can easily be bulked out with more vegetable and rice. With organisation the whole meal can be ready in approximately twenty minutes. If you like hot and spicy add a generous pinch of chilli flakes to the sauce. Some sweet soy/Ketjap Manis can also be added.

Put rice on to cook rice (I use the microwave) whilst chicken is browning and make a side salad or vegetables whilst the chicken is simmering.



Sticky Chicken
1 kg chicken thigh fillets or however many you need, each fillet cut into two or three
3-4 cloves garlic, crushed
1 jar tomato passata /puree
1/4 cup worcestershire sauce
small knob garlic grated
1 tablespoon sugar or a little more if sauce is not sticky enough
small amount of oil

Optional
1 onion diced or thinly sliced
500g mushrooms sliced or 1 package of pre sliced from supermarket
chilli flakes

Put a small amount of oil in frypan and heat until hot, add chicken pieces and cook until lightly browned, turn over and brown the other side. If adding onions and mushrooms add at this point. Add garlic and ginger, tomato passata/puree and worcestershire sauce and simmer until sauce is thick. Add sugar and continue to cook for a minute or two. Once the sugar is added watch the sauce and stir as it will tend to stick and burn. Adjust seasoning, add salt if necessary or a small amount of soy such as Ketjap Manis.
